Goa’s Delightful Meat Blend

Meat Roast is another traditional dish on Goan dining tables, especially for celebrations, and this juicy preparation combines well with red meats, where the roast slices wonderfully complement other dishes. Prepared in a pot resulting in an aromatic, succulent dish, Goan Meat Roast can be enjoyed as a tantalising starter or main course. Add potatoes in any form - baked, roasted, chips, mash or wedges - along with bread, rice or pilau and make a complete meal. It also doubles up as a sandwich filler, the ideal dry lunch option for working individuals, children, bachelors and others. Our original recipe includes a blend of local vinegar, ginger, garlic, cloves, cinnamon, chilli and black pepper resulting in a delectable paste. GOAN FLAVOURZ MEAT ROAST

ORIGINAL RECIPE

INGREDIENTS NEEDED:
- One pack – Goan Flavourz Meat Roast Seasoning Paste.
- 1 kg meat: Chicken/Beef/Pork, wash and drain.
- Two medium-sized onions finely chopped.
- Two red chillies (optional).
- Potato Chips (for garnish).
- Salt and preferred cooking oil, as required.


MARINADE:
Pierce meat with fork or make light cuts with a knife, apply salt to meat. Coat the meat with Goan Flavourz Meat Roast Seasoning Mix and marinate for 2 to 3 hours.

PREPARE IN 3 EASY STEPS
1. Heat oil and stir fry the red chillies and onions till golden brown. Add the marinated meat pieces and fry on a medium flame, stirring frequently. Transfer the fried meat to a pressure cooker, add water as needed, and pressure cook till meat is tender.
2. Remove meat pieces and cut into slices. Taste and add salt, if needed.
3. Simmer slices and gravy in an open pan for about 5 minutes, till gravy thickens. Serve with potato chips.

IDEAS
Vinegar may be added to enhance taste, based on personal preference. To increase pungency, when cooking add slit green chillies. To reduce pungency, use more chopped onion.
